The Brasserie, with its bold and colourful design, welcomes food lovers throughout the day with a menu created as a four-hands collaboration between Romain Baudron, a Chartres native with a passion for exceptional local produce, and David Gallienne, the Michelin-starred Norman chef and winner of Top Chef France 2020.
To start or end your evening, the Maleyssie Bar invites you into the atmosphere of an Italian theatre, a nod to Chartres’ neighbouring theatre, enhanced with contemporary touches.
The drinks menu features a fine selection of beverages, including creative signature cocktails created by a talented bartender-mixologist who came all the way from Liverpool.

The first festive celebrations at Maleyssie are all about indulgence. For the occasion, our chef has created two special menus, each offering its own distinctive culinary journey.
For Christmas Eve, the menu pays tribute to the history of this elegant historic residence through a selection of French classics, including Bouchées à la Reine and Sole Walewska, an iconic dish named after Countess Walewska, a Polish noblewoman associated with Napoleon I and an ancestor of the property’s current owner.
For New Year’s Eve, let yourself be surprised by a succession of creative flavour combinations designed to celebrate the arrival of the new year.
From the very first bite to the final dessert, this festive menu embraces originality, with bright, tangy flavours running through dishes such as trout, crab and Granny Smith apple, followed by the legendary and indulgent Mont Blanc dessert.
