On the banks of the Eure, in the poetic and intimate setting of the , Stéphane and Mickaël have been sharing their passion for hospitality, their love of gastronomy and the pleasure of entertaining since 2019.

Having both worked in exceptional establishments, they chose this historic setting as their home, captivated by the character of this beautifully restored 17th-century residence, with its understated charm and timeless elegance. Passionate about art and historic architecture, Stéphane and Mickaël now also share their expertise and warm hospitality at , right in the heart of the city.

The New Chapter of Maleyssie

From the moment they arrived in the region, these two passionate entrepreneurs dreamed of creating an original, joyful and vibrant destination — a new landmark in the city’s cultural and social life.

When the City of Chartres launched a project to bring new energy to the former municipal police headquarters, Stéphane and Mickaël were immediately drawn to this 19th-century private mansion, captivated by its generous spaces and the possibilities it offered in terms of layout, atmosphere and design.

As lovers of art and history, they envisioned a bold new destination in the heart of this vibrant district, just steps from the Italian-style theatre, at the very heart of Chartres.

Maleyssie: A Story Across the Ages

Regional investors Fabrice and Maguelonne Walewski joined the adventure, acquiring the elegant property and entrusting its operation to the two Chartres-based entrepreneurs.

Stéphane and Mickaël brought Maguelonne Walewski, a renowned and highly creative interior designer, into the project. Her vision introduced a sense of boldness and freedom to the renovation, while carefully preserving the mansion’s historic character through the addition of vibrant colours and contemporary touches.

Together, they imagined a distinctive destination centred around a unique and ever-evolving way of living: from the bar to the brasserie, from elegant suites to private lounges, conviviality, gastronomy and the French art of living take centre stage, throughout the day and for every occasion.
